Although still a niche product and market, bison meat is a growing protein source. The industry for buffalo is doing well, and experts say it’s a viable option around the country and especially in California. Many ranchers have thought about a possible change to bison, but that decision can be overwhelming.
Dick Gehring with Black Kettle Buffalo represents the National Bison Association and says the industry needs more producers as demand has picked up. Gehring hears one question a lot: “Is raising bison anything like raising cattle?” Gehring added that physical changes to converting a current cattle ranch to handle bison is not much of a process.
