You know it has long been established that the most popular breakfast food in the world is bacon. Sliced bacon. No, smoked sliced bacon. Not many people know that without the flavor produced by smoke, bacon would not likely even rate as a breakfast food. And the type of wood used to create that smoke gives bacon its true flavor. One preference has always been oak. Because it is hard and it burns slow. But there are other bacon smoking woods used in the process. Hickory has long been a favorite choice. It is even promoted. Hickory Smoked. You have seen it on a lot of packages. And there is pecan wood. Or apple wood. I’m not familiar with apple wood. I wonder if it gives bacon an apple flavor. Guess it does. So, now I’m going to go now and look for me some apple wood flavored bacon.
