The overall crop has the potential to pass 2-million gallons. According to the California Olive Oil Council, weather and ripeness determine the exact time the harvest begins, and different varieties of olives are harvested at varying degrees of ripeness to capture different flavors. Several farms and towns celebrate the olive oil harvest. In the Sonoma Valley, the festival is celebrated for three months.
