When you buy beef anywhere in America, the grade makes a difference in what you pay. There are three choices. Prime, Choice, and Good. The difference isn’t much, but, you pay more for Prime than you do for the other choices. Now, some consumers demand Choice or they will not buy it.
With pork it is different. A pork chop is a pork chop regardless of what it cost. There is no grading to pork. Well, that is about to change.
There are those who think grading will encourage U.S. consumption of more pork. You see, the United States is the second largest producer of pork in the world. Yet, we fall into eleventh place when it comes to consumption.
If pork is graded it will encourage more consumption. It may be awhile, but it is coming. Looks like it is anyway.
