Assistant Professor at the University of Arkansas Kristen Gibson is leading a research program looking at farmers markets food safety. Gibson says standards vary from market to market. The research is aiming to create a web-based log of different market standards that will be available to vendors. The program is also looking at QR codes for buyers safety in handling produce.
