Greenhouse Veggies to Grow in Winter

Some of your favorite vegetables can be grown during the colder winter months, especially if your greenhouse is setup to allow thermal mass heating. Summertime annuals will not thrive or even survive in this situation. The thermal mass wall will provide heat, the greenhouse attachment protection from frost and wind, but by morning, temperatures inside will have dropped significantly.

Consequently, it’s important to choose plants — cabbages, lettuces, carrots, parsley, leeks, for example — that have a better chance of withstanding the colder temps. Some of the best wintertime survivors in the greenhouse include dark, leafy greens, kale, spinach, arugula, and chard. All are able to take on the colder weather and actually improve as a result. The best herbs to grow and survive in the wintertime are parsley, sage, rosemary and thyme.
