“Real California Milk Month” Recipes

It’s June National Dairy Month and California’s Gov. Brown has just announced that June is also “Real California Milk Month.” In honor of this holiday, here are California dairy-inspired recipes and cookbook from the California Milk Advisory Board (CMAB).

Additionally, have you ever wondered how dairy farmers milk 1,200 cows, two to three times per day? If so, here’s a video that shows you how this big and very necessary deed is done.

California Dairy Recipes:
Milk Jam Recipe –
Ingredients:
1 qt. milk
1 ¼ cups granulated sugar
¾ tsp. baking soda
½ vanilla bean (cut lengthwise, scrape insides into mixture then toss whole bean in)

Directions:
Bring to boil, stirring to dissolve sugar. Reduce heat to simmer, stirring occasionally. It will turn dark, small bits will appear; will take about 2 ½ hours. Strain milk through a fine mesh sieve. Let cool then put small amounts on cookies, toast, crackers, crepes or fruit.

Kahlua Fruit Dip –
Ingredients:
8 oz. soft cream cheese
1 cup whipping cream or whipped cream
¾ cup brown sugar
1 cup sour cream
1/3 cup Kahlua
Optional: 1/3 cup chopped nuts
Directions:
Whip whipping cream and cream cheese together. Add other ingredients in and mix well. Chill for two days. Mix well before serving. You may add drops of food coloring for seasonal effects. This dip is also great in coffee or with ice cream.
