Why Forage for Dandelion

Over the years, many gardeners have disliked coming across many bunches of dandelions.

Because one flower head is known to provide up to 200 plants – with literally no work at all.

Dandelion Preserves

But it’s not all bad. Dandelions are edible and provide an admirable serving of dietary fiber, riboflavin, and thiamin, as well as huge heaps of Vitamin A, C, E, and K, calcium, minerals, and iron. The leaves are considered edible greens and grow bitter with age.

Dandelions are also used for medicinal purposes, treating liver, and gallbladder issues.

Anyone looking to forage dandelions should, of course, be aware of potential toxicity, such as herbicides or polluted runoff, and make sure that you can identify the plant as a dandelion before eating it.
