Still principally a vegetable grown in the South. But, it has long been a favorite of cooks everywhere as an ingredient in vegetable soup. It mixes well, and adds flavor to the other components in the soup. It is a healthy vegetable. As a separate dish, it can be cut into short pieces and deep fried. Or, some people simply boil it in clear water. It is served as an individual vegetable.
